Asparagus recipe

Anyone have anything new for asparagus?

I have a ton from easter I didnt cook
I will look in my recipes but what comes to mind is the standard oven roasted with garlic and olive oil...

hollandaise sauce
eggs
phyllo wrapped asparagus
proscuitto wrapped...


and of course I am so mature I am thinking is the urine stink.Chat Icon

My mom made the best asparagus dish for Easter-I even ate it and I cant stand asparagus!!Chat Icon It was like a cassarole.

this is fast and easy.

1 bunch asparagus
1 package baby bellas
parmiggiano reggiano
3 or 4 cloves garlic, smashed
olive oil

chop the asparagus and bellas into large but bite sized pieces.

give the garlic gloves a good whack with the back of your kitchen knife, peel, and add to saute pan of heated olive oil (medium heat). cook for about a minute or until fragrant..add asparagus and mushrooms. mix quickly to coat with oil. cover pan and allow to cook...stirring often until to desired doneness (you can add a tablespoon of water if you like)

salt and pepper to taste. Grate parm cheese over veggies, mix and serve.

I either serve this plain or add to omelets. it's a big and easy hit!

I roast them in the oven. I put a little olive oil on them, and salt and pepper- and then roast them at 400 degrees for like 15-20 mins. They are soooo delish that way!

I do the same, but I also sprinkle a little Parmesan cheese a few minutes before I take the asparagus out of the oven. Yummy!

I do the same, then right after I take them out of the over I sprinkle about 1 tbls of balsamic vinegar over them to give more flavor.

DH would like me to add that asparagus makes your pee stink after eating it. Thanks DH. Chat Icon

Minus the cheese and you have my fancy dinner way of making Asparagus. Minus the cheese and the mushrooms and it is my everyday way of making asparagus.

But now I am dying to try it WITH the cheese!

ok, I made the asparagus..which recipe you ask?

Well, of course it was the one I always make..sure..why not?

steamed, salt & pepper and can't believe it's not butter.

thanks for the suggestions..I guess I was too tired, too lazy and just wanted it done fast..it was good though.

Next week I'll try one of the yummy versions.

I steamed them and put a dressing with olive oil, dijon mustard, red wine vinegar, shallots, and parsley on the asparagus and the bed of lettuce that I served them on. For the garnish, I used hard boiled egg yolk pushed through a fine sieve.

I wrap them in thinily sliced prosciutto (sp) & then drizzle a mix of evvo, lemon juice & s& p over them , I then grill them , once they are done sprinkle a lil pecorano romano & done , HTH

Wished I logged in before I made dinner...so would have done this instead of steaming and adding I can't believe it's not butter with a dash of salt & pepper. Will try next time we want asparagus.

cut them into large bite-sized pieces.... fry in olive oil until 80% cooked through. Add diced up bacon and pine nuts. Continue to sautee until bacon is cooked and pine nuts are lightly toasted. S&P to taste....

(same recipe works great for green beans too)

i take asparagus and onions cover them with lite italian dressing, salt pepper and some i can't believe its not butter then wrap them in a tin foil packet and bbq them for about 15 minutes..yummy!! can't wait for dinner!

after steaming them I drizzle butter and sprinkle some bread crumbs on top-put in for 5-10 min or until bread crumbs are brown. DELICIOUS!!!

microwave a few mins first to soften, then fry in a tiny bit of oil & sesame seeds. sometimes i add a tiny bit of soy or terriaki sauce
