Awesome Strawberry Spinach Salad
My mom made this for a party yesterday and everyone was raving about it.
Salad Ingredients:
2 bags of baby spinach leaves
2 cups of strawberry sliced
1 ½ cups of chopped pecans
½ stick butter melted
½ cup of granulated sugar
The night before-Preheat the oven to 350 line a cookie sheet with foil. Melt the butter, in a bowl add the butter to the pecans and stir, then add the sugar and stir again till they are all coated. Place the pecans on the cookie sheet and bake for 8 to 10 minutes just till you start to smell them. Remove the pecans from the oven and use a fork to separate them (move them around) and let them cool. Place them in an air tight container once they are cooled.
Dressing ingredients: can also be made the night before
1/3 cup of balsamic vinegar
½ cup of sugar
½ tsp salt
1 cup of Canola oil (must be Canola)
Mix the 1st 3 ingredients until the sugar dissolves I use a Wisk and it take a little while (don’t add the oil if the sugar is not dissolved) then drizzle in the oil, whisking the entire time. Store in an airtight container. Mix all ingredients together toss and serve you might have some extra nuts and dressing left over depending how much you use.

I loooooove toasted pecans on anything!!
This sounds like it would also be good with a nice raspberry vinegarette!
