Baby food- apples question

When making your own- do you have to peel the apples first? Also- how long will the food last in the fridge?

The skin on apples is able to be digested by babies, but just to make it smoother, I peeled it for the first 2 months. Now, when I make it I leave the skins on to make it a little thicker.

I asked a similar question and most people told me to peel them, so I do.

I think ... wholesomebabyfoods.com says it will last 3 days in fridge. But i put into ice cube trays and freeze, sooo easy!

I take out DS's breakfast, lunch and dinner and put the cubes in tupperwares the night before. They defrost overnight in the refrigerator. For vegetables and things that should be warm, I put the whole container in bowl with hot water to heat up.

Microwaving loses nutrients. Its not a big deal, but if I'm going through the trouble of making all his food, I'd like to save as many nutrients as I can. The stovetop works fine also if you put a frozen cube in there.
