Baby Shower
My BIL's gf is having her baby shower next weekend and I offered to help cook things. Does anyone have some good, simple, EASY recipes that I could make for a group of 35ish?
Her mother is doing a mac n cheese and pesto chicken. I had offered to do baked ziti, but I think it may be too much. I also thought of doing pierogies because they are pretty quick and easy (I get them at a Polish butcher right by my house), but if I do those, I want to do something else that isn't so carb-filled.

I think a baked ziti is good! Other ideas:
Chicken salad on croissants Pasta salad (I love Greek pasta salads!) Meatballs Sausage/Peppers Pulled pork (easy in crockpot)

If you are looking for something that isn't carb-based, this marinated shrimp recipe is really good! You can make it in advance ... I've served it at many parties and it's always a hit. But it's not too heavy... it's light and refreshing.
I always add some lemon zest to the marinade, too, to amp up the lemon flavor.

Pulled pork goes great with mac and cheese! You could serve with slider buns and make some coleslaw too.
I wouldn't do ziti since you already have a pasta dish.
