Bacon
I have a package of bacon I want to use up one night this week for dinner.
What are your fave bacon dishes besides the obvious (grilled cheese, BLTs, breakfast at dinner).

I put it in baked potato soup, lentil soup, spinach salad, Mac and cheese...I could use it in everything! My husband likes it on top of turkey meatloaf too.

My new favorite way to use bacon -
chopped up and toss onto French green beans, chopped shallot, EVOO, S&P.
Throw onto a baking sheet and roast for 40 - 45 minutes at 360.
I like them a little burnt at the edges.

My DH likes it on a grilled chicken sandwich... grilled chicken, bacon, cheddar cheese.
You can use it to top a salad.

A package of bacon is too much for just DH and me so I freeze what I don't use. Makes it easier too when I just need a couple of slices for a recipe.
Of course he could eat the whole package in one sitting.

Bacon grilled chicken penne
Its basically a box of penne, some grilled chicken peices (I marinate first in a garlic and herb marinade), bacon, some heavy cream, garlic, crushed red pepper, and parmesean cheese. You can also add some cream cheese to thicken but I prefer it without.
