baking chicken cutlets?
I'm trying to be healthy here... I dipped each side lightly in olive oil before I put it in the Pyrex in the oven. Put the oven on 300 and turned them after about 10-15 min... they looked and smelled great... nice and moist looking... Fast forward to me taking the mout of the oven and putting them on count or 5 min... I come back and yuck, they're like crunchy and the bread crumbs are almost their regular consistency pre-cooking... WTH is wrong???? lol

If I am going to bread and bake the chicken, I use mayo to coat then dip in bread crumbs...juicy and tasty and you'd never know that you used mayo. A little tip from a former roommate who was a health nut

I never cook any meat or poultry at 300.....maybe it was at too low of a temperature????
Next time, try 325 or 350 for 1/2 hour. I usually do 325 for 40 minutes and they come out perfect.
But I dip them in egg, then bread crumbs.........I dont use oil. If I do I'll use Spray Olive Oil just to coat the pan. Either a Pyrex dish or a Stone dish.

Are you usingn very thin cut cutlets? I find if they're too thin they dry out. I buy the thicker ones and pound them out so they're thinner, but still thicker than the thin cut ones. I also cook them at a high temperature (I did this tonight and cooked them at 400 for 40 minutes, they were perfect!)

here's a baked chicken recipe....
1 cup seasoned breadcrumbs 2 cloves garlic-squished 1/3 bunch of parsley-chopped 3-4T melted butter salt 1.5 lbs thin breast 2 lemons - cut into thick slices
preheat oven to 350. Combine first 5 ingredients. Lay bare chicken breasts in a pyrex dish (with lid). Spoon a mound of crumbs in the middle of each breast. Top crumb mounds with a thick lemon wedge. Bake with lid on for 35 min. totally delish!

For the simplest baked chicken cutlets recipe, I dip in beaten eggs w/ a little bit of milk, dip in bread crumbs and bake at 350 for 15 minutes on each side. If the cutlets are a little thick, I'll do it for 17-20 minutes on each side. Unless a recipe specifically calls for it, I never bake anything (especially poultry) below 350.

I never use oil to coat my chicken cutlets. I use egg whites & dip them in breadcrumbs. The oven is no lower then 375. There are times I put it at 425 if I want them crunchier. They come out great everytime. 15 minutes on each side.

I do it like this too. You can use the fat free mayo too. They are GREAT!!!! I add alittle parm cheese to the bread crumbs too.
