BBQ appetizer needed for tomorrow...help
We are going to the in-laws for a family BBQ. I have been assigned to make an appetizer. I have 24 mini margarita glasses and was going to do those with cocktail sauce and shrimp. MIL shot it down tonight saying it would be too hot for shrimp (ok, I can see that, but why is her sister still bringing deviled eggs to sit in the heat???  ).
I am semi-addicted to Pintrest and have found cucumber/feta boats and cucumber roll ups. DH wasn't thrilled with either (as if he has to make them). So please help me make something good. I have no one to impress, but I am so tired of their usual cheese and crackers/veggie platter. They have thirty coming with about ten kids. They have a taco dip and buffalo dip coming. Ideas are needed and very much welcome. Thank you!!!

I tweaked that recipe as follows:
Watermelon Salad serves 12
1/3 C - olive oil
3 T - lemon juice
2 t - kosher salt
1/2 t - pepper
8 lb. - watermelon balls (seedless)
2 C - feta cheese
1 small sweet onion
1 C - chopped mint
It's delish and so refreshing on a hot day

You can't go wrong with homemade guac!
If possible, I'd cut up all the ingredients when you get there and throw it together so it stays fresh.
Or maybe some hummus with pita chips. Love that!
A few weeks ago I went to a BBQ and the hostess set out a whole plate with cut up cukes and a veggie dip. This is one of my fave snacks when I'm at home.

I would use your mini glasses anyway and do individual veggie dips in them. Something like this maybe?

I love this salad, except I usually just cube the watermelon. Refreshing.
