Re: BBQ side dishes

I've been racking my brain for side dish ideas lately because we're having a BBQ for the 4th. I think I finally decided I am making an Italian macaroni salad (with salami, provolone, etc), grilled portobello mushrooms with tomatoes and fresh mozzarella, and i think i'm going to try this recipe
Paula Deen's Broccoli Salad. Debating on doing baked beans too. I'd love to hear other ideas!

Re: BBQ side dishes

I have a really yummy corn casserole recipe-- everyone who eats it LOVES it!

-1 box Jiffy corn muffin mix (8.5 oz)
-1/2 stick butter, melted/softened
-1 can (14 or 15 oz. can) regular corn w/half the liquid drained
-1 can (14 or 15 oz. can) creamed corn
-8 oz. sour cream
-1 egg

Stir all together until combined. Pour into greased baking dish (I use a bigger pan so that it's not too thick, so it cooks quicker) and bake for about an hour (usually takes a few minutes more, check on it).

It is YUMMY! Chat Icon

Re: BBQ side dishes

Deb I cut up zucchini, squash, eggplant, and veggies actually and marinate in a bit of olive oil and balsaminc vinegar and grill them on the bbq all the time and they come out really good!

Also throw some corn on the cob on the bbq if you like!
