Made this over the weekend and it was great and pretty easy..

Ingredients:
2 pounds London broil
Flour
3/4 cup butter
3 medium onions, chopped
1/2 pound mushrooms, sliced
1 cup tomato juice
16 ounces sherry
1 cup low-fat sour cream
Salt and pepper to taste

Preparation:
Cut mean into strips (not too thin) and dredge in flour. Brown quickly in half of the butter. Remove meat from skillet and add remaining butter. Add onions and mushrooms. Cook 5 minutes.
Add meat, salt, pepper, tomato juice, and sherry. Bring slowly to a boil. Cover and shimmer until tender, about 1-1/2 hours. (Can be made ahead to this point).
Just before serving, stir in sour cream. Serve with rice or egg noodles.
