Besides take out and using the BBQ, - I need some ideas on what to make for dinner in this awful heat we are having!
I sometimes make big salads, omlettes, or get a pizza, chinese food- which I am careful b/c they do not use the air conditioning and leave the doors open in the take out places. Tonight is a Zorn's chicken. I need some ideas to have for dinner to make on top of the stove that is quick and easy. I keep the air conditioner on, but who wants to cook in the heat?! KWIM? I will not grill in the heat either- too hot to be standing over a BBQ. Thanks in advance- and if you have any recipes, please share.

Last night we made taco salad and the only cooking required was browning the meat and heating up the beans. We used Grillin Beans Black Bean Fiesta and they were delish!

tacos
fajitas
sausage and peppers
pasta and any type of sauce (clam, alfredo, vodka, bacon w/ tomato, primavera, bolognese, sausage & broccoli rabe, etc)
chicken cutlets (breaded, parm crusted, etc)
mashed potatoes
rice
cous couse
fried/pan sear pork chops
fried/sauteed fish/shrimp/scallops
shrimp scampi over pasta
breakfast for dinner (pancakes, waffles)

Do you have a crock pot? I have ribs cooking right now and I just need to make a veggie and I have deli salads for some sides.

Buffulo Chicken Salad
Mixed/Tossed salad

perdue short-cut chicken/rotisserie chicken
blue cheese crumbles
hot sauce dressing.
