I'm very picky on my Cesar and honestly only love the one at carrabas at at Rumba in Hampton Bays.
The copycat Carraba's one is:
2/3 Cup extra-virgin olive oil 4 medium garlic cloves 10 anchovy filets 2 tablespoons of small capers 1/2 teaspoon dry mustard 2 eggs, separated from the whites 4 Tablespoons red wine vinegar 1/2 teaspoon tabasco sauce 1/2 teaspoon worcestershire sauce Juice of 1 lemon 6 Tablespoons of your favorite grated or shreaded Parmigian cheese Salt Pepper

I use Marie's. I make homemade croutons, chop romaine (or sometimes grill and leave whole leaves), mix in the dressing, add pepper and shave fresh parm on top. SO good and everyone that I have served to LOVES.

I love this one
•3 tablespoons (packed) grated Parmesan cheese •2 tablespoons mayonnaise •2 teaspoons fresh lemon juice •1/2 teaspoon Dijon mustard •1 small garlic clove, minced •1/4 teaspoon Worcestershire sauce •1/4 cup extra-virgin olive oil
Whisk together Parmesan cheese, mayonnaise, fresh lemon juice, Dijon mustard, minced garlic, and Worcestershire sauce. Gradually whisk in 1/4 cup olive oil. (Dressing can be made 1 day ahead. Cover and refrigerate. Bring to room temperature and rewhisk before using.)

I cut day old bread (italian) into cubes, place on cookie sheet, drizzle with olive oil, sprinkle a little dry herbs, salt, pepper and parm cheese, shake around until all cubes are coated, place in 350 deg oven and cook until bread is crisp.
