I definitely agree with My So Called Life. I was so sad when they cancelled it.
Ditto for me, too. That's the first show that popped into my head when I read the question.

Although technically Claire Danes chose to leave the show when it was picked up for a second season.
And she's done so well since leaving it 
I mean, she's been in some minor hits, and she gets good reviews, but I think she would have been so much bigger with a little more time on MSCL. And they left poor Brian Crackow in the street!!!
