Re: Brown rice cooking help
Sauté in butter or oil before adding water. Use less water than is called for in the directions. Don't cook it as long as called for. Cook it over a lower heat than is called for and let it sit covered for 10 minutes before serving. Switch to brown basmati rice.
Let me know if this works.

Re: Brown rice cooking help
I cook it like pasta basically then let it steam.
I heat up a big pot of water. While that's heating up, I rinse the rise a few times under cold water. When the water in the pot starts to boil, I add the rice, stir and put on med for 30 minutes. Drain the rice quickly then return to pot. Put a piece of tinfoil over the top and then place the lid on and let it steam in its own leftover liquid for 10 minutes. Fluff with fork.

Re: Brown rice cooking help
I use Carolina Brand Brown Rice.
I usually make 1 c of rice at a time, so I will boil 2.5 cups of low sodium chicken stock. I add 1 teaspoon of olive oil to it.
When the water boils I add the rice, stir, lower the heat to about 2-3, and cook for 45 minutes.
Turn off the heat and let it sit for about 5 minutes again before I serve, which helps it to lift out of the pan IMO and gets it a little fluffier.
I also have done it where I started with some onion, carrot, chopped brocolli in the pan with a pat of light margarine (I use Smart Balance Light), sautee them until the onion is clear, then add the stock, boil it, and add the rice. I call it "Brown Rice Pilaf" to my family and they like it that way bc it's slightly different then plain brown rice.
Another tip----I have made double batches of brown rice and froze the 2nd half. Since it takes 45 minutes to cook some nights I don't have that amount of time to cocok dinner, especially if I am making a quick stir fry. SO I freeze the cooked brown rice, open the tupperware, sprinkle with water and microwave for about 4 minutes and it comes out perfect! So once you get it right you can make big batches and freeze them for basically "instant" brown rice.

I agree.
I have such a hard time making rice, white or brown. Last time I made a little for DS I had to try 3 times. Good thing he took a 2.5 hr nap that day.
