Cake Pop Makers? Question for you..

Do you freeze your cake pops before dipping?
Also, what kind of chocolate do you use? And I've read that some people add a little oil to their chocolate to make it more manageable.. Do you? I feel like everytime I make something "chocolate dipped", its a disaster. I use a double boiler but I've also used Wilton's electric chocolate melter.. Nothing seems to work for me! Thanks so much!

I'm no expert, but yes, I do freeze mine for like 20 minutes before dipping. And I only take a couple out of the freezer at a time so they do not get soft again. I use the Wilton's melting chocolate and do only a little at a time. I melt it in a mug in the microwave.

I struggled with cake pops in the beginning, too. I start by melting my chocolate in the microwave. I know a lot of people say it's the bad way to do it, but I never burn my chcoolate. I just put it on for about 30 seconds at 20% power and stir then repeat. After that, I keep my crock pot on the "warm" setting and put my mug or mason jar or whatever with melted chocolate in the crock pot. Then you fill it up with water until it's about half the height of your chocolate mug. This way, the chocolate stays at a perfect melted consistency while you're dipping. I think that was our biggest issue, the chocolate starting to cool and harden as we dipped. I also definitely add a little bit of oil to thin my chocolate. It comes out so much smoother that way.

Also, I do freeze my cake pops, but like a pp said, only for about 15- 20 minutes. You don't want the cake pop TOO cold and the chocolate TOO warm because once the chocolate cools, it will crack. There's so many things that can go wrong with cake pops, I know. It seems like once you figure out a fix for this issue, it causes another one! Chat Icon But, keep trying.
