I make a turkey meatloaf in the crockpot that comes out great. Not sure how healthy it is, but I figure its not bad with the low fat turkey meat. Its just:
1lb of ground turkey
fistful of bread crumbs
fistful of grated parmesan cheese
Two eggs
1 chopped red pepper
1 chopped small onion
Mix all together and form into oval, put in crock pot
Top with some tomato sauce
Heat on High for 4 -5 hours

I don't have any now, but I did ask Santa for the "Cooking Light" crockpot cookbook, so hopefully I'll have some to post soon!
