Can I just brag a little?!
I wouldn't consider myself a great cook but I am ok. Well I just made Ina Garten's chicken pot pie for dinner tonight and it came out AMAZING! I even surprised myself at how great it came out. Even my DH, who is so hard to please, thought it came out awesome! What have you made lately that was so yummy?!!!

I've made that, so yummy! I think the only recipe I've ever made of hers that wasn't fantastic was her chicken and biscuits. It had way too much onion between regular yellow onion and pearl onions. Other than that I always love her stuff!

I make a really good pumpkin soup. It's so simple too. I am making it for our Octoberfest at work tomorrow. (We're having a soup/salad bar).
Also last night, I got lazy and threw in a TJ's meat lasagna into the oven.
DH couldn't stop raving about it and doing cost comparison analysis vs. homemade.
I make lasagna for real a couple times a year and always get wonderful comments.

Cauliflower soup. Just for me since DH hates it.
Fried some pancetta in a big saucepan, let that cook a bit, added in some diced onion. Cooked that until the onions were soft. Added in cauliflower, chicken stock to cover, pinch salt, 1/2 teaspoon smoked paprika. Brought it to a boil then let simmer until the cauliflower was soft. Pureed with an immersion blender, added a bit of half-n-half for extra creaminess.
So good. Next time I might leave out the paprika and add carrots and some thyme for different flavor.

That is the recipe I use for chicken pot pie and it is my favorite!! I use Imagine organic chicken stock and it tastes even better when I find it.

Sounds yummy I have to try it.
I made a roasted chicken this weekend using the Pioneer Woman's recipe and it came out FABULOUS! So juicy and flavorful
I cooked some seasoned potatoes and carrots right in the pan with it too.

I probably make my pumpkin soup really similarly.
I sauté onion in coconut oil, curry and red pepper (have used red pepper pastes in the past too), then just open cans of pumpkin (not the pie mix) and coconut milk and let simmer and thicken).
It's in the crockpot now and smells heavenly.

I pretty much do that, but I roast the butternut squash because there is no canned pumpkin here. I saute shallots then add a tsp of Thai red curry paste, then add some minced garlic and ginger. I put the roasted squash in the pan and cover with chicken broth. I cook for 20 mins with a lemongrass stalk. I then use an immersion blender and then add some coconut milk with another tsp or two of red curry paste and a few tsp of fresh lime juice. I cook until thickened. It was delish!

I had friends over for dinner last night, and I think the meal came out really well, if I do say so myself!
For a starter, we had a salad of mixed greens with chopped Asian pear and granny smith apple, thinly sliced red onion (that I had soaked in water to remove some of the "bite," because I generally don't love raw onion), and crumbled feta, with a really flavor homemade red wine vinaigrette.
Then I made Giada's butternut squash lasagna (which I've made before, and is always good... it's a bit labor intensive, but you can assemble it all ahead of time, like any lasagna and just bake before serving).
And I made a variation of her pancetta-wrapped pork roast recipe.
I bought a center cut pork loin (about 2.5 lbs). I sprinkled the pork with salt and pepper and then coated it in a paste of finely chopped garlic (several cloves), fresh thyme, and fresh rosemary mixed with olive oil (just threw the garlic, herbs, and oil in a mini food processor). Then I wrapped the roast in pancetta, put it in a roasting pan, and poured about 1/2 cup dry white wine and 1/2 cup chicken broth in the bottom of the roasting pan. I roasted it at 450 for about 1 hour, until it was done. I transferred the pork to a cutting board and let it rest for about 10-15 minutes (loosely covered in foil). Then I made a gravy by melting 1 TB butter in a small saucepan, adding 1 TB flour (whisking together for about 1 minute) and then I added the pan juices, let it come to a boil, and then simmered for a few minutes to thicken.
Dessert was chocolate fondue with cut up strawberries, pineapple, biscotti, pretzel rods, and marshmallows.
I think the meal was flavorful and perfect for fall! I will definitely make the pork again. It was a good entertaining meal, but you can assemble the pork up to 24 hours in advance, keep it in the fridge, and then roast it before dinner.
