Make chicken soup from scratch (i.e. use the bone and the chicken with celery, carrots, and a boquet garni). Put just the broth unfiltered into a dish and put into the fridge. Skim the fat - that is what schmaltz is and then render it. To render schmaltz, cut the chicken fat (the stuffthat comes from the top of the broth) into small pieces and melt it in a pan over low-to-moderate heat, generally with onions and a little Wonder flour. After the majority of the fat has been extracted, the melted fat is strained through a cheesecloth into a storage container.

You want Schmaltz, I got schmaltz.
I save all the chicken fat that I have taken off of a chicken and freeze it, I then cook it and render it down to liquid.
I don't do this very often, but on ocassion when I have made gribenes, I have done it. Mmmmmmm gribenes.
