Can you post your homemade tomatoe sauce recipe?
I never made it from scratch unless you call using tomatoe puree from scratch. My grandmothers made mostly meatsauce which they used tomatoe paste for the base but I have hard time using the paste.

I just open two cans of stewed tomatos and puree them. Then I saute some Olive oil with garlic and chopped onion. Mix that in with the puree with some spices, and sometimes a little red wine, and voila.

Mine is very simple but delish and a hit!
I only use San Marzano tomatoes. They are sweet and cook beautifully.
I use 2 large cans of the San Marzano tomatos and I puree them before I do anything.
I don't measure anything.
In a big pot, I heat up olive oil and then saute garlic (I use alot; probably around 5-6 cloves), diced onions, oregano and sometimes throw in a few crushed fennel seeds. once that is sauted well and everything is all mushy (without burning the garlic or onions), I then pour in the tomatoes. I then add the (kosher) salt and pepper to taste and and wine (about 1/2 cup) then I put it on high until the sauce boils and then I just lower the heat and let it simmer all day. I check it every so often, but that's it really.

i do basically the same as above except i add about a half cup of sugar and maybe a pinch of cinnamon
i wish DH liked sauce, i can never make it!

if you mean using fresh tomatoes, I do the following. (I love serving this over ravioli)
finely dice RIPE plum tomatoes (at least 3 pounds. you can discard the juice and the seeds if you wish. I do it kinda haphazardly. I DON"T blanch and peel the tomatoes beforehand.)
finely dice and sautee one large onion in olive oil. once the onions start to soften, add 6 cloves finely minced garlic.
sautee until the onions completely soften and the garlic is fragrant (do not BURN)
add dry spices (oregano, crushed red pepper, salt, black pepper, dried basil) and sautee with onions/garlic.
add 1/2 cup white wine. let cook for a few minutes
add diced tomatoes.
allow to simmer for 20 minutes, stirring frequently, until tomatoes are soft.
check the seasoning. add salt and pepper and a touch of sugar if need be.
add FRESH basil and parsely.
add FRESHLY grated Parmeggiano Reggiano.
at this point I usually add either chicken breast or shrimp to the mix. cook them out and serve.

It is hard to find tomatoes ripe enough or sweet enough to make this sauce most times during the year. the last time I made it, that tomato flavor just wasn't there. save it for some really GOOD tomatoes

this sounds really good and pretty easy....Im going to try this when we get some good tomatos...
