Can you share your stuffed shells/lasagna cheese recipe?

I know it's a little random. I have a good sauce recipe but want to perfect my cheese.

I mix 1 container of ricotta cheese, 1 egg, a good amount of parm cheese, basil and oregano, salt and pepper for my stuffed shells/lasagna.

ricotta cheese, a small wedge of mozz, diced into small pieces, one egg, salt, pepper, grated parmiggiano, oregano, basil, parsely, and a few hits of freshly grated nutmeg.

Me too. When making for a holiday and or guests, I use whole milk Ricotta. When its just dinner for us ion a weeknight I use the part skim.

This is what I do. It HAS to have diced mozz...though I add more than a small wedge. Chat Icon

And I agree that whole milk ricotta is the way to go. It's easy to make at home if you want to be super fancy.

This is how I make it as well.

For stuffed shells, I add chopped broccoli to the cheese mixture.

I do the same thing except I get shredded mozzarella so its ready to just mix right in Chat Icon

Thank you! the concensus seems to be 1 egg. I wasn't sure if I should be using 2. I use a 32 oz. container of ricotta. Will def. try diced mozz. I usually use shredded.

So, I don't have measurements (don't ask) but, I actually put pound cake and chocolate in the ricotta with eggs...I know, weird...It's my grandmother's recipe that I just started making, but it got rave reviews this weekend Chat Icon

Mine is similar but I use peccorino romano, grated mozzarella and italian parsley
