My all time favorite island has been Turks & Caicos. I stayed at Club Med when I was there which probably isnt' where you want to stay. The beaches and water is beautiful beyond belief.
ETA: Look at this place....I want to go!

St. Lucia is awesome - ALSO, check into St. Thomas. You can get your relaxation/romance, but then you could also head into town for some nightlife/shopping/etc.

I stayed at Sandals St. Lucia a few years back...I believe it's now called the Regency. It was awesome!

We stayed at Sandal's St Lucia about 8 years ago and loved it...and we're going to Sandal's Royal Bahamian in May. We didn't want to have to "think"  we just wanted to relax.

St Thomas is awesome. I wouldn't stay AI there, since the restaurants there are so yummy.

I just asked my co-worker...she went to St Thomas all inclusive last month. She said that she stayed at the Wyndham something or other, and it was awesome.

You can do Grand Lido Negril, Couple Resorts, The half Moon resort, and Royal Plantation. These are all inclusive and are located in Jamaica.

Iberostar hotels are great you will find them in Dominican Republic and Mexico...

Also in Jamaica we went to Grand Lido Braco - another Beaches all inclusive. It was a wonderful vacation!

We went to Sandals Dunns River for our honeymoon and it was awesome. Highly recommend.
