This is my base recipe:
carrot cake

My changes are:
3/4 c veg oil (down from 1 and 1/4)
1 c white sugar (down from 2)
1 c brown sugar
3 tsp cinnamon (instead of 2)
1/4 tsp nutmeg
1/2 c applesauce
sometimes I add raisins

and I drop the sugar in the frosting to 3 cups.

This is the BEST recipe I have found. Amazing every time.
