Catering, how many trays should I order?

Planning an event for approx. 40-50 people and plan on ordering

chichen Fran.
Veal Marsala
Stuffed Shells
Sausauge & Peppers
Eggplant Parm.

I'm thinking 1 full tray each except for the stuffed shells I think I should order 2 full trays of that. Do you think 1 full tray is enough with the rest

Other foods I'm having is shrimp platters, cold antipasto platter, salad/vegetable dish. Breads..

I remember being told that for every 10 people, you order one full tray of food.
So for 50 people you would need 5 full trays. Sounds like you'll have plenty.
