Cheap, fun, yum restaurant for girls night.
Girls are coming from Massapequa and Huntington.
Any recs besides a mexican place and Salumi?

Don't know if it would be too far, but Milk & Sugar in Bayshore. Or Barrique in Babylon, or Melting Pot on 110 in Farmingdale

The Phoenix in Seaford - I went a few months ago and thought it would be a perfect place for a girls' night out. It was a little loud, but it had a fun vibe, an extensive cocktail menu, a diverse food menu that would probably be more appealing to women... a lot of different apps, small plates/tapas, salads, etc. as well as some traditional entrees.
Also - I haven't been there, but I was reading a good review recently of Vinoco in Mineola, which is a wine bar/tapas restaurant. It's on my list to try. I always think tapas are fun for girls' night, but maybe it's too far west if everyone's coming from Huntington and Massapequa.

LOVE Snaps! Although if it's a big group, it could be a little tight, since it's not a huge restaurant. But I really like the menu there.

Definitely recommend making a reservation for that reason!
I think they could accomodate a larger group, but not if they were a walk-in.

Aji 53. Its a sushi place with pretty good drinks. They're not that cheap but the food's really good.

I know I said cheap but we ended up choosing Besito. Pretty sure that's NOT cheap.
