Chicken - Getting skin Crispy
Besides frying, I would like ot cook chicken legs and drumsticks and get the skin crispy.
Any recommendations?

I usually cook it at 400 degrees and it gets pretty crispy. You can throw it under the broiler for 1-2 minutes after cooking to crisp it up even more.

How long do you cook it for?
I get paranoid about cooking chicken enough...but I don't want to overcook it and dry it out

I made brick chicken last night and it was really good. It is a variation of Guy Fieri's recipe here I used the spices I normally do (onion, garlic and rosemary powder with paprika and black pepper) as a rub. The chicken was SOOOO juicy inside.
The hardest part was finding a pan that would fit in the other pan. The bricks don't get warm or anything, they are just for the weight. My stove was very dirty afterwards from the grease spitting. After reading the reviews about sticking I used a hot cast iron pan on the bottom and made sure to use a generous amount of EVOO.

Bake it in the oven at a higher altitude. Sprinkle salt, pepper, garlic powder and paprika on it and bake until it browns. I usually spray margarine on it too. For a whole chicken that’s about 7 lbs I cook it for about 2 hours in the oven on 400. It’s never dry. I actually made this last night. For just drumsticks and legs it shouldn’t take that long maybe about 45 minutes depending on how many you are making. Just prick it with your fork to make sure juices run clear.
