Chicken and cheddar recipes??
Does anyone know what I can do with some chicken breasts and fat free shredded cheddar cheese?
I recently made the chicken, broccoli and cheddar casserole so thats out.
I want to make baked potatoes with it. Any ideas?

i'm italian...i'd fry the chicken cutlets and then twice bake the baked potato and melt the cheese over it

lol- i'm not italian and that's what I was thinking too!!
I was also thinking did you ever see that sizzling chicken dish at TGI Fridays? They grill chicken cutlets and melt the cheese right over it--- SO good!!!

quesadillas...
grill the chicken and then slice it....
in a frying pan, melt some cheese on one side of a tortilla (almost like an omelet), then top cheese with chicken, some tomatoes or pico de gallo, and some crumbled bacon...or anything else you want...and a little more cheese on top and then fold the other side of the tortilla on top...cut into wedges and serve with sour cream, and salsa...
