Chicken and Potato bake?
I am looking for an easy, fat free dish with chicken and potatoes.
Id like to prepare it now and just stick it in the oven later.
Its chicken cutlets if that makes a difference. I just want something easy for tonight when I get home after running errands.
Anyone have any recipes?

if you mainate the cutlest in lemon juice & a lil evoo. then bread them , you dont even need egg to bread , its delish,,
& just cut up some potatoes & roast them with herbs

Package of chicken (breast, legs, whatever)
small bottle of italian dressing (fat free, if preferred)
a few red potatoes, sliced into think steak-fry size, or quartered and then cut in half again
salt, pepper, garlic powder
sprinkle chicken with garlic powder, salt and pepper. place chicken and potatoes in a baking dish (I usually use a 9x13 glass pyrex) pour the dressing over everything - use your judgement on how much to use - make sure you put enough in to make it moist, but not enough where everything is swimming in dressing. bake at 400 for about an hour or until the chicken is done and potatoes are soft. (I like to par-boil the potatoes to give them a head start - they take forever otherwise)
It makes the house smell so yummy as it's cooking!

I do this also and I love it...It os so easy and only 1 pan to clean. I'll try the parboil for the potatoes...That might help

Boil potatoes in water for about 5-6 min just to get them started

i take chicken breasts, then cut up a few potatoes as thin as possible ( use the mandolin- they come out nice and thin). put the chicken in a 9 x 13 baking dish, then put the potatoes all on top of and around the chicken. Then, dump about 1/2- 3/4 of a bottle of low fat italian dressing on top of it all. ( you can use less dressing, but i like it nice and seasoned). then cover and bake at 350 for about 30 minutes. then uncover it and bake it for another 10-15 minutes, until chicken is done and the potatoes are slightly crispy. sooo easy and really good!!
