Chicken Meatloaf Recipe, EDITED
i make taco's now with ground chicken and they are so good, not to mention lower in calories and fat and u would never know it's chicken. also the roasted broccoli recipe looks good, so i'm adding that also.
got this recipe from people magazine

CHICKEN MEATLOAF 2 lbs ground chicken 1/4 cup tomato paste 1 tablespoon chopped marjoram 1 tablespoon chopped parsley 1 tablespoon chopped garlic 2 tablespoon chopped onion 2 tablespoon worcestershire sauce 2 eggs, beaten 1/2 teaspoon salt 1 teaspoon pepper 2 tablespoons ketchup
Preheat oven to 425. Combine chicken, tomato paste, marjoram, parsley, garlic, onion worcestershire sauce and eggs in a bowl. Place mixture in a non-stick loaf pan, spread ketchup on top
Bake uncovered for about an hour or until meatloaf is furm to the touch in the center. Let meatloaf settle 10 minutes before serving. Serves 6

ROASTED BROCCOLI
1 head brocolli, cut into spears 2 garlic cloves, chopped 1 tablespoon olive oil Salt and pepper to taste
Preheat oven to 450. Toss broccoli with garlic, oil, salt and pepper, then spread it onto a baking sheet. Roast for 15 monutes. Serves with 3/4 cup brown rice
Meatloaf: Per Serving: Calories 578 (127 from fat) Protein 44g, Carbs 73g, Total Fat 14.1g (sat fat 4g)

Oh, those both look YUMMY! Will have to try them...I may actually use ground turkey for the meatloaf instead of chicken, as that's what I prefer.
