I found these on LIF
I have a crockpit salsa chicken recipe. Couple frozen chicken breasts, a can of mushroom soup, 1 jar salsa, corn and blackbeans, a little water and a packet of taco seasoning. Cook on low all day and its amazing, especially in a tortilla.
Chicken (breast pieces cut up or whole chicken w/o skin) 1 Jar of salsa
Cook on high 4 hours or low for 6-8.

I do frozen breasts, salsa, a can of black beans rinsed and drained, a bag of frozen corn, sometimes green chilies or jalapenos. Some people put cream cheese in as well but I've never done that. Cook for about 6 hours on low, shred the chicken and throw it back into the sauce.

I make this one that I found on LIF and we love it!
Salsa Chicken
6 chicken cutlets, thin sliced 1 jar reduced fat cream of mushroom soup 1 packet taco seasoing 1 jar salsa 1 can diced tomatos with green chili (Rotel) 1/2 cup sour cream
Place chicken cutlets in bottom of crock pot and sprinkle with taco seasoning. In a large bowl combine all other ingredients. Pour over chicken and place on low 7-8 hours. Serve with rice or wrap in tortillas.
This makes an incredibly creamy shredded chicken mixture that you can eat by the bowl, wrap in tortillas or taco shells, or serve over rice with corn.

I do it with chicken thighs and a container of the la mexicana roasted garlic salsa (in the produce section)
I simply cut the skin off the chicken, I'll do 4 thighs, put a splash of white wine in the bottom of the pan and then pour the salsa over top.
So easy and so good.
Can be done with chicken breasts also and you can leave out the white wine if you want to, not required just adds a nice flavor
