Chicken taco recipe-Shredded chicken?
I want to make chicken tacos tomorrow night. Does anyone have a shredded chicken recipe that they love? I usually just cook chicken in enchillada sauce and some spices and then shred but am looking for new ideas. Thanks!

I use a rotisserie chicken - cheaper and saves me time. Sometimes I marinate chicken with taco seasoning watered down b/c it's very salty and grill then chop up.
I love fish tacos w/ Tilapia.

You can used diced tomatoes, onions, and, jalapenos and cook slowly until the chicken falls apart. (I also add a small can of crushed tomatoes)

I add Adobo, pepper, cumin, jarred jalepeno peppers, onions & mexican cheese blend (From the bag) I boil chicken breasts in water with 2 bullion cubes. I make a enchilada sauce with onions, peppers, & about 20 fresh tomatillos. I broil them,then throw it in the food processor. I add a little sugar.

I just shared my recipe from Food & wine mag. Came out great. I will pst it. I used skinless, boneless chicken thighs and then sliced it.
Recipe: In a blender you puree tomatoes (I used canned diced a 14 oz can. 1/3 cup lime juice and a teaspoon of salt. Put it in a zip lock and marinate the chicken for a few hours. Best overnight
Take the chicken out and pat it dry.
Spray a cold grill or grill pan with Pam. Preheat.
brush the chicken with canola oil. Dust it with paprika, parlsey, salt, pepper and I used chili powder. I squeezed some lemon and lime juice over it while grilling. Grill each side about 6 mins or until done. Depends on how thick the pieces are.
take it off the grill and let rest. slice it after a few minutes.
Warm up corn tortillas. These are the best kind.
For taco fixins it recommended tomatoes, avocados, onion and salsa verde and shredded cheese.
We added to that sour cream and salsa.
I made some rice pilaf to go with it.
It was so yummy. The chicken was out of this world.
I have leftovers!
I usually take recipes and make them my own. Everyone has different tastes.
The things that should stay the same on the recipe is the patting dry of the chicken and spray the grill or grill pan with pam.
Spanish rice would have been a good choice but I was too lazy to make it.

this is my fav of ALL times..
in a slowcooker-
6-8 boneless skinless chicken breasts 1-2 chipotle chilies chopped with 1 tsp of the adobo sauce 2 cloves garlic sliced 1/3 cup jarred salsa
throw together, slow cook for 8 h rs and then take out & shred.

Salsa Chicken Burrito Filling Ingredients 2 skinless, boneless chicken breast halves 1 (4 ounce) can tomato sauce 1/4 cup salsa 1 (1.25 ounce) package taco seasoning mix 1 teaspoon ground cumin 2 cloves garlic, minced 1 teaspoon chili powder hot sauce to taste
Directions 1.Place chicken breasts and tomato sauce in a medium saucepan over medium high heat. Bring to a boil, then add the salsa, seasoning, cumin, garlic and chili powder. Let simmer for 15 minutes. 2.With a fork, start pulling the chicken meat apart into thin strings. Keep cooking pulled chicken meat and sauce, covered, for another 5 to 10 minutes. Add hot sauce to taste and stir together (Note: You may need to add a bit of water if the mixture is cooked too high and gets too thick.)
