Chocolate chip cookie experts come in please!
What am I doing wrong?? Every time I make chocolate chip cookies they come out flat and crumbly. I use the recipe on the back of the TollHouse bag of chips. What could be causing them to go flat?

The only thing I can think of is there is too much liquid or the pan is hot when you put the dough on it.

Re: Chocolate chip cookie experts come in please!
Ok- the MOST important step in making cookies is creaming the butter and the sugar together.. this is for ALL cookies, not just chocolate chip.
I have a stand mixer and I literally let the butter/sugar cream for 5 minutes- I walk away and do other things while I'm letting it go..
The mixture should be pale & fluffy. then add the rest of your ingredients. Do not over mix the flour. Just mix 'til combined.
Make sure your baking soda is fresh... since it is so cheap, I use a fresh box every season.
When you bake, make sure you bake in center of the oven- I believe tollhouse you only need to let it go for 10 minutes.
I only do one sheet at at time- this allows sheets to cool in between batches. I also use parchment paper to line my sheets.
I allow the cookies to cool on the sheet for about 3 or 4 minutes before moving them to a wire rack.
Hope this helps.

Check out the recipes on this page from an episode of Good Eats. Alton Brown explained the chemistry behind the different textures of choco chip cookies. http://www.foodnetwork.com/good-eats/three-chips-for-sister-marsha/index.html
If you're interested in his banter and explanation of how the ingredients work together, the transcript is here.

Definitely use fresh baking soda. Also, when I put the "dry" ingredients in a bowl separately, I use a wisk to mix it up and aerate the flour mixutre.

My sister makes the BEST cc cookies. Its the tollhouse with an extra half cup of flour, extra tsp vanilla and an extra cup of chips. They stay fluffy and soft b/c of all the extra chips.
