Chocolate Ganache cake filling? - does it taste good?
I don't know if I've ever had it but DH said it was a little bitter.

it depends on the type of chocolate you use and whether it's bittersweet or semi sweet.
I used semi sweet for my son's bday cake and it was delicious. not too bitter at all.
I also made a white chocolate ganache that was really fantastic, and I don't even really like white chocolate (I used ghiradelli white chocolate chips)
whatever you do and whatever recipe you follow, measure your chocolate by weight, not by volume. it's best to use a food scale.

I also use semi-sweet chocolate and heavy whipping cream. It's sooooo good. Not bitter at all.
ETA: Just saw you are having it made- can you do a tasting? Where is it from? We used Dortoni's Bakery for our wedding cake and had chocolate ganache filling and it wasn't bitter at all. It was soo delicious. That's what began my love affair with ganache. lol!
