Re: chop meat
I know its still a type of meatballs but you can make Italian Wedding soup...it has little meatballs in it.
How about sheppards pie?

Re: chop meat
I made an easy chili recipe with chop meat last night I made it over brown rice but you can use white rice
use a little oil and brown some garlic and onions. brown the chop meat and add some garlic, cumin, chili powder, oregeno and black pepper (if you need the exact measurements let me know, I eyeball everything) when meat is browned add a 14 oz can of tomato sauce, 1/2 cup of water and a chopped up tomato. Let simmer about 10 min. then add kidney beans and let simmer 5 minutes. Serve over rice.

Re: chop meat
I just found this recipe on line, I also want to make something with chop meat tonight:

Minute Rice 1 c. water 1 c. grated (shredded) Cheddar cheese Salt Pepper Combine 1/2 can tomato sauce, bread crumbs, ground beef, onion, salt and pepper to taste in bowl. Mix well with fork. Pat the meat mixture in bottom and sides of 9 inch pie plate or small baking dish. Combine rice, remaining tomato sauce, 1/2 teaspoon salt, water and 1/2 cup grated cheese in bowl. Re: chop meat
what about spaghetti with meat sauce?
On the Bisquick Box is a recipe for Hamburger Pie..it's pretty good, I usually dress it up with some extra seasonings.
I know you said your kids don't eat chili, but i make a chili pie - you could change the seasonings around -
you take a pyrex dish - mkae a quick box of corn muffin mix and put it in the bottom, when it's 1/2 way done, put the chop meat mixture (already cooked)with whatever seasonings you like on top, cover with cheese and bake for another 10 minutes or so.
or stuffed peppers - saute the meat - mix with cooked rice & a can of diced tomatoes, some italian seasoning, and stuff the peppers, put the peppers in a pyrex dish, cover with tomato sauce and bake for 30 minutes.

Re: chop meat
I like to make Salisbury Steak. My mom used to make it when I was little. It def not the healthiest. I usually make the patties 30 minutes ahead and put them in the fridge so the don't fall apart when cooking. Serve with mash potatoes.
Simple Salisbury Steak Prep: 15 min - Cook: 20 min
1 lb. ground beef 1/3 cup dry bread crumbs 1 small onion, finely chopped (about 1/4 cup) 1 egg, beaten 2 tbsp. water 1 tbsp. vegetable oil 1 can (10 1/4 ounces) Franco-American® Beef Gravy
MIX beef, bread crumbs, onion, egg and water thoroughly. Shape firmly into 4 patties, 1/2 inch thick.
HEAT oil in medium skillet over medium-high heat. Add patties and cook until browned. Pour off fat.
ADD gravy. Heat to a boil. Reduce heat to low. Cover and cook 10 minutes or until patties are no longer pink (160°F.).
Makes 4 servings
