Re: Chopping Knife

I have a set of Henckles. they are not top of the line, but very good and I don't really need chef-quality ones that are $$$.

We use a santoku knife for chopping. I think it's made by Calphalon.

I love that knife!

I just got a great one at Macys for $13, they are on sale at the register, I think they are cuisinart!

I haven't used it yet because we are starting construction on a new kitchen tomorrow...but its in my new stuff box!

Re: Chopping Knife

OK- don't get a set.
go to the store and get something from the open stock.
i find this is MUCH better and much more economical. You really need to touch & feel the knives- hold them in your hand and see how they balance- b/c a knife feels different in everyone's hand.

I have three of the major brands- Henckels, Wusthof and Sabatier.

My favorite is my 7 or 8" (forget what) sabatier chef knife.
It's heavy and balances well in my hand. It is forged instead of stamped. Forged are hand made- you can tell a knive is forged b/c it has a "curtain" of steel right around above the handle. Non-forged knives don't have that curtain and the blade goes right into the handle.

I would say go to fortunoffs- they have a bunch of different brands- and see what feels best in your hand. The Sabatier was about $75.

I also have a wustof japanese chef's knife- you know the one that rachel ray uses- i like it but I don't use it way as much as the sabatier.

we have a whole set of the Sabatier Loire knives and love them! we got them as a shower gift. the steak knives are good, not great. but all the other knives in the set are awesome!

Re: Chopping Knife

This is a great knife - and Target sells it - Kitchen Aid is the brand - I think it also comes with a stainless handle

Re: Chopping Knife

I love my Wusthof Santoku knife. I got a set of knives (actually two) at my shower and I regret it. Having a few good knives are all you need.

I ended up getting the Wusthof at Bed Bath and beyond with a 20% off coupon

Re: Chopping Knife

I use this for vegetables and this for meat

Both are light and very sharp and pretty cheap for a decent knife. Free shipping too.
