Christmas brunch/lunch ideas
Am having a few people over for a Christmas brunch/lunch.
Just my parents, my sister, myself, DC and a friend and her DC.
Must be simple. lol

We usually pick up bagels the day before.
We use our waffle maker. I give DH that task. My mom will make eggs because I can't stand them LOL.
I make bacon and sausage.
My MIL brings over a baked french toast casserole made with the left over Italian bread from dinner the night before.
I also set out cheese and crackers and chips and dips.
Maybe some fresh fruit too.
Of course mimosas and DH likes to make bloody marys.

My mom makes an awesome baked French toast, it is perfect because you assemble it the day before and bake it in the morning.

I do a late breakfast/brunch every Christmas morning with my parents.
Ideas we've done before include:
Gingerbread waffles in the waffle maker
Quiches (can make a couple of kinds and make ahead)
Eggs in a cup made in a muffin tin -- you line a muffin cup with ham or prosciutto or some thinly sliced meat, but shredded hash browns or creamed spinach at the bottom, crack an egg on top and sprinkle with cheese, bake until eggs are set (ham gets crispy and forms a cup).
Ina Garten (Barefoot Contessa) has a recipe - I'd have to look it up - for blintzes made in a 9 by 13 pan. The recipe can be done in advance, but it is delicious! You serve it with a blueberry sauce. It is definitely a "special occassion dish."
Fancy coffee cake is always nice... Ina Garten has a recipe for one that is like a Drake's coffee cake. I also have a good one for Williams Sonoma for a raspberry sour cream crumb cake. Or muffins are good.
I usually do bacon or sausage on the side... can fancy up the bacon by brushing it with maple syrup before baking.
Fresh fruit platter.
I always do mimosas or bellinis (champagne or prosecco with orange juice or peach) as well as coffee.
I try to make things I can do in advance because Christmas morning is hectic with ds opening his loot!

I love breakfast caseroles. So easy because you can assemble the night before and just pop in oven. Just do a search on google or all recipes for some good ones

I've made a breakfast bake a few times and it's very good. You can put everything together the night before.
Ingredients: 1 Sausage Log (use 2 of the Zesty Bob Evans) You can also use other types of meat (i.e. bacon, ham) 8 Eggs 12 Slices of bread ripped up (stale is best) 4 Cups shredded cheese (I used cheddar) 4 Cups of milk 1 Tablespoon of powdered mustard 2 Tablespoons of Worcestershire Sauce Salt and Pepper (Few shakes of each)
The night before: 1. Cook the meat. 2. Mix in a large bowl the 8 eggs, 4 cups of mile, tablespoon of powdered mustard, 2 tablespoons of worcestershire sauce and the salt and pepper. 3. In a 9 x 13 pan layer the following: 6 ripped up slices of bread, 2 cups of cheese, 1/2 cup of meat. Repeat again, 6 ripped up slices of bread, 2 cups of cheese and the rest of the meet. 4. Pour the egg mixture on top. Cover and store in fridge.
In the morning, preheat overn to 350 degrees. Cook the mixture for one hour.
