Christmas menu: Filet Mignon with a PASTA dish - got a rec?
Was thinking a shrimp, but not shrimp scampi.
you have any suggestions?
it's for christmas. here's the menu:
Filet mignon
garlic bread
asparagus
broccoli
PASTA DISH YOU RECOMMEND
Corn?

At my moms we do filet mignon and we usually do manicotti or stuffed shells HTH

What about pesto? You serve it cold and it's more like a pasta salad. Very yummy.
Also, alfredo sauce would probably work. Actually, I make my alfredo more like a pesto alfredo and it comes out really tasty! Do it with bowties!

Sure!
Alfredo Pesto Sauce:
* 1 pint heavy cream
* 1/2 cup (1 stick) unsalted butter, softened
* 1-2 cups grated Parmigiano-Reggiano (start with 1 cup and add more if you like it thicker)
*~1 cup Grated Romano cheese
*~1/4 cup store bought (or your own) pesto sauce OR *1/2 to 1 cup fresh chopped basil + 1 clove chopped garlic
* Freshly cracked black pepper (I like A LOT)
To prepare alfredo sauce: Heat heavy cream over low-medium heat in a deep saute pan. Add butter and whisk gently to melt. Sprinkle in cheese and stir to incorporate. Stir in Pesto (or Basil and garlic). Season with freshly cracked black pepper.
Add more Cheese, Basil and Pepper to taste.
*a tip - Waldbaums sells the tubes of fresh herbs in the produce section. When I can't get fresh basil, I use a couple tablespoons of the tube Basil. I don't really use dried because I find it tastes different.

I make a spin-off of carbonara without the eggs.... sautee lardons of bacon, take out, add onion garlic. make a rue, then add milk, parm/romano cheese, black pepper, pinch nutmeg, etc. i think the bacon flavor would be good on the side on steak!
