Combo meal...chicken and eggplant parmesan recipe needed for tonight!
I don't eat meat but DH does, so I want to make an easy chicken and eggplant parm recipe. I'll separate with some foil, but does anyone have an easy recipe?

YES! Go to Uncle Giuseepes and get the fried chicken cutlets and the fried eggplant, top with there maronara sauce and cheese and bake. Presto! The best chicken and egg parm! HTH

I would just make them the way I usually do,
flour, egg, breadcrumb, then fry.
then line the bottom of an oven safe pan with some sauce, place cutlets/eggplant in and top with mozz and a little more sauce and then bake until cheese gets melty and slightly browned (about 10 minutes)...
serve with some broccoli rabe or macaroni....
