what do you consider easy? little amount of steps? small number of ingredients? i have a bunch of recipes if you want :) how many cookies do you need to make?
i love to make peanut butter blossoms (the peanut butter cookies with a hershey kiss on top) - those are easy.
chocolate chip cookies are always easy too. i like to make giant ones!
you can do classic peanut butter cookies and spruce them up a bit by sandwiching them with peanut butter filling, marshmallow filling, nutella, etc.
i'm a huge fan of pignoli cookies! they are SO easy and they only have a few ingredients. yesterday i also made a spinoff cookie.... i left out the pignoli nuts and covered them in powdered sugar. they were a huge hit!
you can do any kind of thumbprints... you can put whatever flavor jelly in the middle or nutella or you can pipe in some buttercream frosting
shortbread is really easy too. you can make it a little fancier by dipping halt of the cookie into melted chocolate.

This is one of my favorites to make for a cookie exchange. They look so fancy but they're super simple to make. I get different fancy sprinkles - not just red and green sanding sugar.

Ginger Crinkles
Best recipe I've come across. Have been making them for years now.
2/3 cup veg. oil 1 cup white sugar 1 egg 1/4 cup molasses 2 cups flour 2 tsp bakin soda 1 tsp ground cinnamon 1 tsp ground ginger> 1/2 tsp salt --1/4 cup white sugar for rolling
1. mix oil & sugar thoroughly with electric mixer. Add egg & mix well. Pur in molasses. Sift and add dry ingredients until incorporated (will be too thick for electric mixer) 2 Roll tsp of dough into ball, drop into sugar and roll until coated. 3. Place on ungreased cookie sheet. Bake at 350 degrees for 15 minutes. Yield 2dz -

Tip...when forming into balls keep a bowl of warm water handy to keep dough from sticking to your hands.
These are pretty enough to give as gifts!!!

I make chocolate chip fudge bars
You get one of the biggest rolls of cookie dough.
Grease and line a 13x9 pan with a layer of cookie dough.
Pre-heat oven to 325.
In a bowl, melt a bag of chocolate chips...add a pinch of salt and a can of sweetened condensed milk. Melt this in the microwave for like 20 seconds and stir together.
Pour this over the layer of chocolate chips.
Use whatever is left of the dough to add flecks of choc chip cookie dough on top.
Bake for 18-19 minutes.
COMPLETELY COOL.
I stick it in the fridge before slicing it.
You will never look back.

shortbread is super easy and delish!!
3 ingredients:
flour, sugar and butter
I put a toasted almond or walnut on top for a little design

sunmaid raisins have a great oatmeal cookie recipe.
it's on their website and I make them all of the time.
they come out great.
