cooking with whole wheat flour
i have never been successful in baking recipes when just swaping regular flour for whole wheat flour. it always seems dry. does anyone have any suggestions?

I've had the same problem.
I heard using whole wheat pastry flour works better. (Still haven't tried it through.)

doing half and half or a little less works well for me.
ie. if the recipe calls for 1 3/4 cups flower, I do one cup white and 3/4 cup whole wheat.
I have also heard pastry flour works better, but I haven't tried it yet.

I use whole wheat pastry flour when baking. Sometimes white whole wheat works well too.

We're trying to cut out white flour so I have been trying out recipes with all WW flour.
Is there a specific recipe you are looking for?
So far I have made 100% whole wheat blueberry muffins, banana pancakes, banana bread, cinnamon raisin bread and regular sandwich bread.
The cookie recipes I have seen use a mixture of whole wheat flour and whole wheat pastry flour and I haven't been able to find the WW pastry flour anywhere yet (only tried Wild by Nature and Stop&Shop)

That stinks, WF is awesome! Does WBN carry any Bob's Red Mill products? I'm sure they could order it for you. Also, if you have a health food store near you that sells food products they could probably get it in if they don't have it already. I'm surprised S&S doesn't carry it in their natural foods section, some locations have started carrying a lot of specialty items that I can only find at WF.

It's so funny because I called WBN to see if they sold WW pastry flour and they said unfortunately they didn't. When we went there yesterday, I checked the Bob's products and they DID have it!!

the same items that you've listed, but i would really like some bakery items too like cakes & cookies.
