Honestly, I don't like making corn bread from scratch. I prefer to use Jiffy mix (comes in the light blue box usually 3 for $1). You add eggs, some milk, stir and bake.
If I want to get fancy, I'll add some diced jalepenos and cheddar cheese to the batter before baking.
