Corned beef in the crock pot....UPDATE 7/13
No matter what I do, I screw it up  Its always tough as can be...Only one time it came out good !
Can anyone tell me what, if anything, special they do to make it fall apart ?
Update......It happened again 
9 hours, on low and it still was like cutting through a basketball 
I give up !

Hmmmm... I always do it on slow but have been doing it for closer to 8 hours ...Is it possible I'm cooking it TOO long , or maybe I just keep buying crummy cuts of meat ( I usually buy the flat brisket)

Do you have enough liquid in the crock pot? Is the lid securely on?
I would think that after 8 hours, the meat shoud be exremely tender!
Thats what I would think....maybe i don't have enough liquid ...
I usually cover the meat with water and put the put the cabbage on top ....Maybe I should try the meat alone next time ???

Yep, that I do ...Me and corned beef just don't get along
And the worst of it is, my last name starts with an O' .......LOL! And Im a red-head to boot !

Maybe it's your crockpot? I had one that when it was on low it cooked like it was on hi. Just a thought....

Totally agrree with this. My crockpot cooks really fast. I always have to adjust the timing.
