Creamy Lentil Soup
I made the best soup this weekend and just wanted to share the recipe, it came from The Daily Soup Cookbook
I just had some for lunch and am really wishing I had brought more, mmmmmm
Creamy Lentil Soup 2 tablespoons unsalted butter 1 large Spanish onion, chopped 2 stalks celery, chopped 2 leeks, chopped 1 teaspoon rosemary 2 bay leaves 1 teaspoon kosher salt ½ teaspoon freshly ground black pepper ¼ teaspoon cayenne pepper 28 oz can whole tomatoes, drained and diced 8 cups, vegetable stock or mineral water (I used chicken stock) 1 pound French lentils (I used green lentils) 3 cups heavy cream 7 cloves garlic, peeled
Melt butter in large stock pot, sweat veggies for about 4 minutes. Add rosemary, bay leaf, salt, pepper and cayenne, mix to coat Add stock, tomatoes and lentils, bring to boil and then simmer, partially covered, for 45 minutes until lentils are tender Meanwhile in a medium saucepan, simmer heavy cream and garlic until garlic is tender and cream is reduced by half, about 20 minutes. After garlic cream has reduced puree with blender or food processor After lentils are tender add the garlic cream and allow to combine and heat through.
The recipe is from memory, but I am pretty sure I have everything in there.
