Crock Pot Chicken recipe for Christmas Eve
We are hosting Christmas Eve this year for 10 people. I love to host but hate not being able to spend time with my family so I am looking to make some sort of crock pot dish so that I can maybe make a lasagna or baked ziti with it and can enjoy the night. My inlaws don't like pork, ham or much red meat, or seafood and I am sure they will be making a Turkey for christmas day so that is out. What can I make that is crock pot friendly? (and preferably a bit on the healthy side!)

I am in the minority on these boards when I asy I not a fan of the crockpot (except for things like soup and sauce and ribs). If it was me, i would make the ziti or lasagna the night before and then take it out in the morning and let it get to room temperature (cut down on reheat time). I would cook the chicken in the oven and 1/2 hour before serving lasagna/ziti I would put it in the oven with the chicken to reheat it and serve with extra hot sauce. (my lasagna always tastes better the next day anyway!). ZA roasted chicken in the oven needs no watching so it wouldlnt take any time away from family (and you can roast veggies in the same pan also).

I dont want to do a roasted chicken since I am sure the next day we will be having some sort of roasted turkey or chicken

I agree with Domino in the regard that I wouldn't serve a crockpot dish on Xmas eve...I feel like everything is soupy in there and thats just not what I think of when I think "Christmas Eve"
What about Chicken Parm? You can do all the prep the day before and then just bake it and it goes with the pasta? Or an Eggplant Rollatine?

I agree with not making anything soupy. I think you can make ham in the slow cooker but I never tried it. What about a pot roast with red potatoes?

here is another suggestion..I tried this and we liked it alot. It makes a lot of sauce so you can definitely use a 3 lb flank steak.

I'd also usually say that I wouldn't use the Crockpot for an "occassion", but I made this a few weeks ago and I think it'd be great for a holiday/company:
Sweet and Sour Flank Steak
It's not a chicken dish either, but maybe somebody else will find it helpful!
