Crock pot recipes for a new mom

My DS is three weeks old and the crock pot is making my evening so much easier. Its perfect because I don't have to worry about getting dinner on the table at a certain time, we work around the baby's schedule.

So far we've been lucky because so many people dropped off food that I froze it and for the last week have been just dropping something frozen in the crock pot to heat up during the day. We've had beef stew, meatballs and sausages in sauce and I even used it to heat up some frozen ziti. But now I'm out of frozen food!

Please share any very simple crock pot recipes you have. Especially anything that does not have to be cooked or browned before going in the pot.

Thanks!

Congrats on the baby!

Here's a link to a post from a few weeks ago for Stuffed Peppers in the crock pot. I made them and they were DELICIOUS!!! Chat Icon You do have to brown the meat (you can use beef or turkey), but it's quick and you can do that while you're prepping the other ingredients. It's a very quick meal to throw together, and it's delicious (and pretty nutritious).

i love making pot roast in my crockpot.... just get a 3- 4 pound roast, put it in there with a bag of baby carrots ( no need to even cut up the carrots!), an onion cut up, and some potatoes cut up. add about 2 cups of water or beef broth as a liquid, and maybe some pepper or thyme or rosemary and just let it cook for 8 hours on low. its on meal all in one pot Chat Icon
AND the best part is that this makes enough for 2 meals for DH and i... so i pack up the leftover, and then the next night, or 2 nights later i put it all in a pan in the oven for about 10-15 minutes. tastes just as good as the first night- seriously!!

i also do chicken cacciatore in teh crockpot. just put a couple bonless chicken breasts in with a can of crushed tomatoes, an onion cut up, and 2 bell peppers cut up. let it all cook for 8 hours... it becomes like a stew type thing, so you can serve it over elbow macaroni or rice.

i also make a chunky chicken chili, but its spicy, so if you're BFing i'm not sure how that all works or if its ok or not...

Thank you to everyone. I found a lot of recipes on the lipton site that look great. I'm going to try to prep some meals over the weekend and make life easier for myself during the week Chat Icon
