You can make any chili recipe in the crock pot. Just brown the beef and onion then throw everythign else in the crock pot.

i posted this chicken chili one that my friend gave us on here before... it comes out really good Chat Icon AND NO browning of meat beforehand- you just dump it all in the crockpot!

chunky chicken chili

2 pounds bonless/skinless chicken breasts
2 cans (14.5 oz) diced tomatoes w/green chili peppers ( you can find these with all the other canned tomatoes)
1 can (15 oz) tomato sauce
1 envelope mild chili seasoning
2 cans (14.5) oz hominy corn ( find in goya aisle)

put everything except for hominy in crockpot and set on low for 6-8 hours.
about 15 minutes before you're ready to eat, drain cans of hominy and add hominy to chili
after 15 minutes, hominy is heated through, and you are ready to eat
i usually eat this with some totilla chips and some shredded cheese on top


ALSO
theres a regular chili from rachel ray that i make a lot, too

ground beef
1 onion
1 big can crushed tomatoes
1/2 can of beer
2-3 tablespoons of chili powder
1-2 tablespoons of ground cumin
a little beef broth
about 3 cloves of crushed garlic
1 small can of kidney beans

just brown the meat and onion, and then throw it with everything else in the crockpot!

I don't really use a specific recipe, but these are the ingredients that I use. I don't care for kidney beans, so I use small red beans. I also found that ales are better than just regular beer. The flavor is much richer. I also put the onions in the crockpot raw... they get too mushy if you cook them first.

Someone posted this recipe on LIW a few years back, and I have made it numerous times in my crockpot and on the stove.

Chili
1 LB Lean Ground Beef (I used more because I wanted lots of beef)
1 onion chopped small (but not diced)
*Brown together with salt and pepper, and chop up beef in pan in little pieces so it's all separated. Done when meat is browned.

Throw in pot.

Add:
1 can stewed tomatoes
1 large can Italian peeled whole tomatoes (broken up with hands)
1 can of lite or dark kidney beans
2 little jars of diced green chili peppers
1 tsp. garlic powder
1 tsp. oregano
1-2 tsp. cumin
2 tbsp. chili powder
2 tbsp. sugar

If in crock - low for 5-6 hours,
Stove - low to medium, keep stirring to make sure blended and not drying out. I let it stay there for around 4 hrs.

Serve in bowls with dollop of sour cream and shredded cheddar cheese

Corn Bread
*this was UNREAL!
Pre-heat to 425, grease brownie pan

2tbsp butter softened
1/2 c milk
1/2 c sour cream
1 egg
1/3 c. sugar
*Wisk those together

1c flour
3/4 c yellow cornmeal
3 tsp. baking powder
1/2 tsp. salt
*combine

Fold wet into dry and add 1 can of sweet creamed corn. Pour into pan. Bake 30 min - Golden Brown - will be moist! Let sit for 15 minutes or so to "set", cut and serve.

this is so easy and dh loves it, it has a little kick to it - but too hot

1 lb chop meat
1 cup salsa (i use tostitos med -but you can use hot depending upon how how spicy you like it)
2 15 oz cans of diced tomatoes
1 15 oz can of pinto beans
1 large onion chopped
2 tbs of chili poweder
2 teaspoons of tabasco (again more if you want it really hot)


brown the chop meat before hand
and throw all the ingredients in the crockpot - cook on high for 3-4 hrs
or low for 6-8 hrs
