Cucumber Salad Recipe
Can anyone share a good one?
I usually do the vinegar sugar mix, but DH doesn't LOVE it.

Mine is usually straight up vinegar, salt, pepper,oil, a little bit of minced garlic, a little chopped dill, some thinly sliced or chopped red onion and cucumbers. I slice the cucumbers and onions and sprinkle with salt and let them sit for a little bit. Then I put the rest in and chill it for at least a few hours. It's straight forward - but pleasant!

I have been using the flavored rice vinegars. I often just eat it with just cucumber and dill, but sometimes will chop up an onion.
DH overall prefers salads with more "stuff" in them though and he likes heavy dressings.

I do the same, but sometimes add chopped up tomatoes and kalamata olives. Yum!
Also, if Im out ofred wine vinegar I substitute Italian dressing and its fine

sliced cucumbers with some sour cream and vinegar, some salt and pepper
or olive oil with fresh lemon juice with chopped fresh mint

Yes I knew I was forgetting something. I add Kalamata olives too.
