Dairy allergy moms
Do you have a good recipe for a dairy free cake? I want to make something for Brendan's birthday that he can eat.

I am going to email my brother now, he is vegan and makes a to die for german chocolate cake
(he's in france, so slight time difference, I will post once he gets back to me and with other cake recipes too)

If you're only avoiding dairy just swap soymilk for regular milk. It's a bit sweeter so it tastes great in cakes and desserts!

if it was just milk it would be easy. i guess it's butter that's the problem with cakes. i'd love to go the betty crocker route, but all of the boxed mixes have dairy. and i'm still wondering about frosting.

oh right, use Fleischman's Unsalted butter - it's corn based and there's no milk in it at all. Just make sure you buy the green label butter - that's the pareve one.
I agree - I don't think boxes are safe - my dd has milk and egg allergies so we have to make them all from scratch.
I have a great vanilla cake recipe I can post - just gimme a second!

here's the info - the cake recipe is from "What's To Eat" which is a great book for milk, egg and peanut allergies. ______________ Vanilla birthday cake (double layer, 9 inch):
3 cups flour 1 1/3 cups sugar 4 teaspoons baking powder 2 cups vanilla flavored soymilk 1/2 cup vegetable oil 3 Tablespoons veg. oil, 3 tablespoons water, and 4 teaspoons baking powder, all mixed together (this is the egg sub - if you don't need to eliminate eggs you can use 2 reg. eggs) 2 teaspoons vanilla extract
Preheat oven to 350 - grease baking pan and mix all ingredients together. The recipe says to bake at 400 degrees for 30 mins but that would be too hot for my oven - I'd say 350 for 30 mins or so and keep checking the cake until it's golden brown.
*since this recipe is for kids with FAs you won't need to add in any butter like you would with boxed cakes.
Also, for the future, you can always go to Whole Foods and buy Cherrybrook Kitchen boxed cakes mixes - they are safe for milk (and egg and peanut) allergies and you can use that Fleischman's butter and/or soymilk as subs.

Thanks Teri! That was really helpful. I actually almost stopped at Whole Foods today to see if they had anything. The recipe you posted sounds good. I think I'll try it!

Here's one that I found today online
Wacky Chocolate Cake
1-1/2 cups flour
1 cup sugar
1/2 teaspoon salt
3 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon vanilla extract
1 tablespoon vinegar
5 tablespoons oil
1 cup cold water
Confectioner’s sugar
Preheat the oven to 350 degrees F. Sift dry ingredients into a mixing bowl. Add vanilla extract, vinegar, oil and water. Blend well. Pour into an ungreased 9-by-9-inch baking pan. Bake for 25-30 minutes. Frost or sprinkle with confectioner’s sugar.
Cherrybrook Kitchen also makes boxed cake mixes and frosting mixes. I have a box in my pantry but haven't tried them yet. Whole foods carry the mixes.

DD has a milk allergy (as well as other's) - I subsitute milk, with soy milk, and butter with soy margarine.
