Dairy/chocolate free cakes for Christmas day...
Does anyone have a really great dairy and chocolate free dessert that I can make for my DD for Christmas day so she doesn't feel left out.
In addition to having a dairy and chocolate allergy she is also allergic to oranges and strawberries.
For Thanksgiving I made her lemon cupcakes and a carrot cake (her choices) but she is now saying she wants something different. So does anyone have any great recipes.

Can she have any dairy? DH and I are lactose intolerant but we're ok with semi-sweet chocolate because there's less dairy. If that's the case I recommend this. I'll go through other recipes of mine:
Chocolate Pecan Pie
4 ounce(s) Semi-Sweet Chocolate Baking Bar 2 tablespoon(s) unsalted butter 3 eggs 1 cup(s) light corn syrup 1/2 cup(s) light brown sugar, packed 1 teaspoon(s) vanilla extract 1/8 teaspoon(s) salt 1 1/2 cup(s) pecan halves 1 (9-inch) unbaked piecrust, store-bought or homemade
Directions
Heat oven to 325F. In double boiler over hot water, melt chocolate and butter. In large bowl with electric mixer or whisk, beat eggs, corn syrup, sugar, vanilla and salt until blended; beat in chocolate mixture. Stir in pecans; pour into piecrust. Place pie on baking sheet on middle rack of oven; bake about 55 minutes or until filling is set. Cool completely at room temperature. Cut pie into 8 wedges; serve with whipped cream or vanilla ice cream.

These are really good too. I've subsituted tofu cream cheese and it still comes out just as good
Chocolate Chip Cheesecake Desserts Ingredients:
-16 oz roll refrigerated Chocolate Chip Slice n Bake cookies -8 oz cream cheese softened -1/3 cup sugar -1 egg -3/4 teaspoon vanilla
Directions:
-Heat oven to 375 degrees -Grease 8 or 9 inch square pan -Slice well chilled dough into (30) 1/4 inch thick slices, place 15 slices in the prepared pan -Combine cream cheese, sugar, egg and vanilla -Spoon cream cheese mixture over cookie dough, place remaining slices over cream cheese mixture -Bake at 375 degrees for 30-35 minutes or until crust is deep golden brown. -Chill squares completely and refrigerate any leftovers -makes 9 dessert squares

My mom is VERY lactose/dairy intolerant. Just a tiny drop and she'd be very sick.
I use all of my regular baking recipes, but alter a few ingredients.
I use vanilla soy milk instead of milk in recipes. And I use fleishman's margarine (unsalted variety) anywhere that would call for butter or margarine because that one is dairy free.
I have lots of great cake recipes...mostly from my betty crocker cookbook. Let me know if you want any of them!

Thank you that sounds delicious but she is allergic to both Milk and Chocolate.

Thank you I would love some of the recipes - do you notice a big difference in how it come out to use the soy and the margarine?
Unfortunately I don't think I will be baking today because both DD#2 and I are sick. So I guess DH will have to make cupcakes for DD#1 b/c he says he can't make a cake...

Honestly most recipes you don't notice any difference with the fleishman's margarine and soy milk. We are bakers in this family, my mom myself and my sisters and noone has ever noticed or complained, and we are always baking like crazy.
I will share some recipes in a bit! Right now I've gotta get my cookies out of the oven!
