DD is on a strict elimination diet - and I need some of your help to come up with some new ideas for meals
DD had hives for about 4-6 weeks unexplained (allergist thinks it is a food allergy BUT b.c of the amount of meds needed and the fact she had full body hives for so long we have to wait until she is hive free for about 30 days and we are only on week 1.5 without any hives). The problem is she hates her food. We don't eat a lot of processed foods to begin with - but for example we DO make our own pizza, and she can't eat that. She loves stir fry - but can't have the lemon or the soy sauce. So she is barely eating. The problem is we removed the fruits she likes (melon, berries, etc). She is eating 90% apples and cheerios with a little bit of the below list.
I am at a loss on what to feed her - I need some new suggestions - This is her diet and what she is eating:
She can eat: Cheerios bananas apples (she won't eat applesauce) Carrots Broccoli Plain chicken plain steak or burgers (she doesn't like burgers) Soy milk Soy cheese Soy yogurt onions Salt Pepper garlic powder baked potatoes
For breakfast she is having cheerios (and cheerios are her snacks) and either soy milk and a banana or I just started to make her soy milk with soy yogurt and banana shakes. She doesn't really love bananas so she barely eats them.
Lunch is steamed carrots and either left over chicken or steak, an apple or banana and/or yogurt IF she will eat any of that.
Snacks are apples and cheerios
Dinner - are basically plain steak with steamed carrots and broccoli (I made baked potatoes but she doesn't like them without a little butter). I tried melting soy cheese but she hated that - she doesn't like them with just salt and pepper.
Or drumsticks - I either just sprinkle them with salt and pepper and garlic powder OR I put a little water in and throw in carrots, potatoes and onion.
I have also made her chicken soup (just chicken, carrots, onion and salt and pepper) - she begs for this than doesn't really eat it.
I'm at a loss - does ANYONE have some meal suggestions that I can do with the above diet (we are egg, diary, peanuts, tree nuts, no seafood, no processed foods, no preservatives, no dyes etc.
The allergist only has her on cheerios (only processed food beside the plain soy yogurt and soy milk)- and no other cereal - no breads yet either (also I have yet to find a bread that is diary and egg free)- or I would try to make chicken fingers with the soy milk.
Can anyone think of some new things I haven't thought of.
Etd to add the above list is the only thing she can have - I forgot to add no citrus or berries - if it isn't on the above list she can't have it.
The problem is she just woke one day head to foot in hives and we have NO idea what started it - but since we pulled her food they slowly disappeared and have not returned so I do believe it was something she was eating. If not more than one thing.

can she have flour?
My kids were on strict diets...used a ton of substitutes for things like pancakes and muffins.

check out the kosher aisles and look for pareve food- non meat and non dairy foods are pareve.

Do you think she would eat various bean soups, like white bean and escarole, just white bean soup, split pea?
You could make the chicken stock yourself and then use dried beans. I make it for my DD and she loves it. You need to soak the beans over night and cook them for a long time. I just add carrots, onions, celery and sometimes potatoes but she doesn't like potatoes.
It would be a great source of protein for her also. Sometimes I add pasta.

Right now no flour - no bread YET - the allergist says maybe soon - I speak with him every 3-4 days. But as of now - no bread - or I would try to make a sandwich or SOMETHING like that.
Once I can give her added grains (cheerios is the only thing now I can give) I expect it will be easier b.c I can make a lot more things.
I am waiting for him to call me back I want to beg for some plain rice -then I can add that to the chicken soup at least.

As of now she can't have pasta or beans. This is why it is so hard - she LIKES healthy food - likes beans, etc - but I can't even put fresh lemons on her food - b.c she can't have citrus.
I'm so at a loss she is a picky eater than add this. Even the allergist says he wouldn't want to eat this diet very long either. The worst part is that DD#2 and I are both on it (DH is never home for it to matter) and we have to eat on it as well so we don't give her contact issues.

Jason brand bread crumbs are dairy and egg free (the red container). They do have soy and wheat, but I think they are not on your list.
I find them in King Kullen (I go to the one on Sunrise in Bellmore) in the bread aisle.

Soy is fine. At least plan soy.
I'm used to cooking non processed things - but when I make chicken I use lemons that sort of thing - so her food is so plain that she really isn't loving it - the only thing she likes is chicken drumsticks - and I just bake them with salt and pepper - but tonight she got rashy around her lips - all she had eaten was the chicken (which she has been eating) and then she used a kirkland wipe (which we have been using for years and it was the middle of a package). So I'm just tired. I don't know what to feed her or what to give her these days.

First of all I feel your pain...my Daughter didn't even start eating foods until about 8 months due to allergies and also was on an elimination diet..now at 18 months she has a somewhat normal balanced diet..she too is allergic to most of the top 8 allergens and it is so hard to find foods for her..
if your DC is eating cheerios then i assume that oat is ok..so try oatmeal.
if she can have potatoes then make her french fries or sweet potatoe fries..
im not sure if u are asking for suggestions for new foods or new ideas with the ones she on now...
u can also smush up the cherrios to make a breading for the chicken, use soy milk the base the chicken in to make it less dry..also beach nut baby puree food has no cross contamination..use their vegetables as a sauce on top and cook it.
you can buy egg replacer for making meatballs .
can she have wheat ? bc i have some ideas for that...
silk yogurt is soy and sold at king kullen just plain vanilla.

how old is DC and is she loosing weight?
also..if u soak the uncooked chicken in soy milk before u bake it..it actually softens it up,,not to put it in the soup

and to add..now that u clarified..that there really isnt much u can do with those foods then what u are doing now...u can try and make a mashed potato chicken casserole by just putting together the chicken, potato, veggies with some oil and bake it in oven..
the thing is its bothering u more then its bothering your DC that her diet is limited..i went through this struggle at one point myself.. my DD was eating the same foods for weeks before we were able to add a new foods. there were times where i had to trial a food for 1-2 weeks before i added another. and it was killing me i was giving the same foods ..but dont worry DC has no clue and slowly u will be adding back foods and she will have a larger diet.. if she happy and otherwise healthy..then keep doing what u are doing until u can add more..just make sure shes getting her vitamins too

Well she lost a little weight - BUT - she had gained a little when she took the steroids when she first got the hives - so part of it was that - but she isn't that heavy to begin with (she was 33.5 at home and at the peds - the allergist got her in at 34) - she is back down to 31.9 on our scale. She was like 32.2 when it all started so it is hard to say. She is 3.5 she will be 4 in June. She is a picky eater for the most part - like will ask for pizza but then won't eat it. But then you make chicken and broccoli with a little lemon juice and soy sauce and she will eat a whole bowl of broccoli. She eats very small meals to begin with (more of a grazer). So she is not taking the diet well.
I have never tried to soak the chicken before - it works with drum sticks? How long do I soak it? Honestly before this - I used to just cook boneless cutlets with a little lemon juice - or cut the chicken up into small pieces and stir fry it with onions, string beans, broccoli, carrots, and peas or other veggies and us a little garlic, lemon and soy. But I can't do that - also DD loves pasta with butter and parmeasean with some veggies and I can't give her that. Her favs are pears, berries, melon, orange juice (for the calcium - b.c she wasn't drinking a lot of milk) - and she can't have any of it. We are ALL basically doing this same diet with her so my 22 month old (the only difference she gets regular milk instead of soy) is hating it too. I just want to bang my head on the wall. We have a lot going on now and then adding this to it - is just frustrating and I feel bad for her. If it was up to her she would drink soy milk and just eat cheerios and apples and occasionally have a drum stick or two. She hates the soy cheese, doesn't like the carrots that she USED to eat - I think b.c now she HAS to eat them.

your poor baby :( u can soak the chicken for about 5 minutes and take it out...same for drum sticks... i would def watch her weight..give her what she wants and dont force it..u dont want feeding issues on top of this.. not sure about where shes falling in percentile for weight..but if she keeps dropping i would def bring up to dr...theres a last resort if the eating is a BIG prob and her weight is still falling and that is to give her a drink called ele care..its made not only for babies but for people who suffer from allergies that need protien, calcuim, vitamins , carbs and all the nutrients to remain healthy..u can give it to her as a drink and she will maintain weight on it..bring it up to your dr/allergist if her weight gets bad... to u and your fam..allergies S U CK

you said she didn't like the baked potato without butter... have you tried getting the kosher margarine? (Mother's brand) its pareve... no dairy. not the best flavor ever, but its workable. or what about ketchup on the potato? you said she could have garlic? what about garlic and some salt and petter on potato wedges.. baked with a little oil to crisp them up? something for a side dish, carmelized onions, corn, salt and pepper. (since you can't do the butter, kosher margarine to carlemelize the onions, or just some oil) mashed potatos with the cheese in the mash? so its blended into the potato instead of being on top. can she have chick peas? what about falafel?

Great I will check the butter out - but does it have preservatives?
No ketchup - can't have tomatoes.
I will try the chips with garlic I have sliced them up numerous times and put salt and pepper on them - but she doesn't like them. She had me make them about 3 times but hasn't eaten them since. I tried melting soy cheese on a baked potato and she said no to that too. No beans yet either - sorry the list of No's is so long it is just easier to say what she CAN have....LOL.

I make this for my son and its really easy. Chicken soup pasta Take the small star pasta and boil in chicken broth until mushy- add in cut up chicken, frozen peas and that's it. I put parmasaen cheese over it but I don't think that is on your list.

I just had to do a huge elimination diet for nursing DD and suspected food allergies.
I had to eliminate:
Soy, egg, milk/dairy, wheat, oat, barley, rye, peanut
Can she have rice? Corn?
I'm surprised the Dr told you OK to soy milk/cheese and not soy sauce. They do make a gluten free soy sauce (no wheat). Maybe you can ask her Dr if she can have a gluten free soy sauce?
I was doing chicken breasts marinated in Bolthouse Farms asian ginger dressing. Ingredients are Apple juice, carrots, Ginger, Olive Oil, and maybe spices. They also have a balsamic vinaigrette that is good.
For breadcrumbs, I found one in the gluten free aisle at stop and shop that is made from corn meal and is gluten free.
Earth Balance makes a dairy free butter you can get at stop and shop.
I have EnerG egg replacer for baking (which I've done with rice flour for cake/pancakes - Arrowhead Mills makes a ton of rice flour/gluten free stuff). If your Dr ok's rice then you could make her pancakes with real maple syrup?

Mashed potato - the potatoes, salt, garlic powder, soy milk, and broccoli and soy cheese?
