Defrosting meat
I have a three pound piece of chop meat in my freezer that I would like to defrost - but I only need about a pound of meat. If I defrost the whole thing, can I re-freeze the other two pounds, or must it be used once it's defrosted? I'm new to this whole cooking thing

You can't freeze, defrost and refreeze meat. Once it is defrosted you have to use it. When I buy meat in bulk, as soon as I get it home I break it down to smaller portions --like 1/4 or 1/2 lb and freeze it like that so I can just grab what I need when I am cooking.

Yup I do the same.
ETA: Defrost it, use what you need for the recipe, and make a batch of meat sauce, chili, etc. to use the rest up.
