i just took the cake out 2 days before and left it in the fridge until we were ready to eat it.

When I first read this, I thought that it meant you wanted to take the frosting off. I was like Why would she want to do that?!
It's the pregnancy brain.
In any case, we ate our cake a few days after the wedding so I can't be of any help.

We just ate our yesterday (our 1st Annivesary)! I took the cake out of the freezer in the morning and it was fine by the time we ate it later last night.
It tasted good and was still moist.

Ill be eating mine later :), i put it in the fridge on friday night. I was so sick the day of the wedding i didnt eat more than the bite Dh gave me.
